BLUEBERRY BANANA SMOOTHIE W/ MACA
This smoothie has been my 3 o'clock go-to recently. If you haven't used Maca before I suggest adding it to your grocery list! Maca is a root vegetable that comes in a fine powder. It has a nutty, malty flavor which works wonderfully in smoothies and also plays well in recipes that use cacao, cinnamon, or nutmeg. Maca Root is rich in vitamins and minerals and may help to restore hormone balance, increase energy, and decrease anxiety.
1 small frozen banana
1/2 cup frozen blueberries
1 cup frozen spinach
1/2 cup frozen cauliflower
1 t maca
1/2 t cinnamon
1/4 t vanilla extract
1/2 cup nut milk of choice (I prefer cashew milk in this)
Add all ingredients to a blender and blend until completely smooth. You can add more nut milk if necessary to get the ingredients moving and reach desired consistency. I prefer a thicker smoothie so I stick to the 1/2 cup, but it does take some patience and pausing the blender to scrape down the sides. Pour into a glass and enjoy!
